You don't need any of the cookbooks. We have recipes posted on the Recipes page of our site that work for all kinds of panini.
Look for Sicilian Bread, one of our favorites for panini.
You can also use the Focaccine with Herbs recipe. We often use purchased ciabatta or any loaf with a sturdy texture.
Many of the loaves we use on the show come from Panera. They will make the loaves in any shape we want when we give them a couple of days notice.

| thanks for your answer. i just was interested in the bread that was on a recent show, the show about different appetizers, that MaryAnn was doing with another woman. did not catch her name, and she quickly mentioned this triangular shaped loaf that was made with semolina. had a nice yellow color and hard crust. |

That was show 1723 and the other woman was her daughter-in-law Jen Esposito. The recipes are all posted on our Recipes page. Type the 4 digits 1723 in the Search box and all the individual recipe names will appear. As I recall, most of the bread used in that show was bought, although 2006 is far enough back that my memory may not be accurate.
